you don't want to miss this...



My body has changed its course since my pancreas decided it does not want to be friends with me. This means that my mind has to change its course with food and eating habits. But I love baking. My mom gave me a new cookbook called "Baby Cakes". All the recipes are gluten free, dairy free, & 'mostly sugar free'. Today I went to Henry's to stock up on my new pantry. Note to others. Try to buy one item each shopping trip as to avoid sticker shock when purchasing your new favorite flour, flax & xanthan gum. Anyhow I whipped up a batch of the choc chip cookies and they were every bit as delicious as normal. (minus the cookie dough which tasted like flax). All in all a huge success. Aubrey was sleeping in her boppy.

Katch - I too am very familiar with the costs associated with restricted diets! Nate is gluten-, casein(dairy)-, and soy-free, and it looks like Lucy will have to go gluten-free too for other reasons. At least there are plenty of resources and alternatives out there now! :)
