time to save money and make soup!


In large pot saute onions, carrots & celery in two tablespoons olive oil over medium heat for about 10 minutes. Stir in broth, beans, tomato sauce, diced tomatoes, spices & cabbage. Bring to a boil, then reduce heat & simmer for at least 20 minutes. Ten minutes before serving pour in pasta to cook. ( Instead of whole wheat pasta this time I used tiny pearl pasta & a handful of pasta shells & it turned out great.)

This meal made about 8 adult bowls of soup. I froze half, we ate some for dinner & Kurto will still get a generous bowl sent to work with him for lunch. The entire meal cost about 7 bucks & when you figure it made two separate meals that is $3.50 for dinner to feed a family of four! I served it with Hawaiian rolls. Anyone else have a good soup to make? I'm trying to make one pot of soup a week...
